Honey Pecan Pie
This scrumptious Honey Pecan Pie is a delectable way to end your Thanksgiving dinner, if you're celebrating. If you're not (or if you already did on 9th October!), you can still bake it, simply because it is a delicious pie!
Ingredients (serves 6 to 8):
For the pastry
1 ¼ cup all-purpose flour
1 tablespoon white sugar
¼ teaspoon salt
½ cup cold unsalted butter, cut into small cubes
¼ cup ice water
For the filling
2 cups pecan halves
½ cup unsalted butter
½ cup demerara sugar
3/4 cup good, pure set honey
2 tablespoons good whisky
2 teaspoons Homemade Vanilla Extract
¼ teaspoon salt
the seeds of ½ plump vanilla bean
3 large eggs
In a food processor attached with the plastic blade, combine flour, sugar and salt. Pulse a few times, to combine. Add butter and process, scraping the sides occasionally, until mixture resembles coarse meal. While on low speed, gradually add water until a soft ball forms. Remove from the food processor, flatten wrap tightly in cling film, and store in the refrigerator for at least half an hour.
Roll pastry out onto a lightly floured surface, adding more flour as you roll to roll it quite thinly. Fit pastry into a buttered 9″ pie plate, letting it hang over the edges. Trim excess pastry, and flute. Prick the base of the pie with a fork. Place in the freezer for 15 minutes, or in the refrigerator for half an hour.
Toast pecan halves in a frying pan over a high flame until fragrant. Remove from the heat; set aside.
In a medium saucepan, melt butter over medium heat. Once the butter is melted, stir in demerara sugar, until dissolved. Remove from heat and pour mixture into a large bowl. Stir in honey, Whisky, Vanilla Extract, salt and vanilla seeds. Whisk in eggs, one at a time, stirring well after each addition.
Sprinkle pecans in pie shell. Pour egg mixture over top. Bake in the middle of the oven, at 180°C/355°F, for 45 minutes to an hour, until crust is golden brown and filling is set. Remove from the oven and let pie cool at room temperature.
Serve Honey Pecan Pie lukewarm with Maple Whipped Cream or crème fraîche.

Since the inception of National Nut Day, great festivals have sprung up around the world to celebrate the versatility and great taste of the nut. Cognac and Honey Pecan Pie
Another more-ish pie, this delightfully scrumptious Cognac and Honey Pecan Pie was our Thanksgiving dessert. Mum, Dad and I had second helpings; Jules had a third and fourth --thinner slices, of course, but still! That's how good it is, and you needn't have an occasion to bake it; it makes a wonderful mid-arvo treat! Happy Tuesday!
Ingredients (serves 6 to 8):
For the pastry
1 1/2 cup plain flour
2 heaped tablespoons caster sugar
¼ teaspoon salt
1/4 cup cold unsalted butter, cut into small cubes
1/4 cup cold lard, cut into small cubes
¼ cup ice water
For the filling
2 cups pecan halves
½ cup unsalted butter
½ cup demerara sugar
¾ cup good, pure set honey
4 tablespoons good Cognac or Brandy
2 teaspoons Homemade Vanilla Extract
¼ teaspoon salt
the seeds of ½ plump vanilla bean
3 large eggs
In a large bowl, combine flour, sugar and salt. Give a good stir. Add butter and lard, and rub them into the flours with your fingers until mixture resembles coarse meal. Gradually add water until a soft ball forms. Flatten pastry, wrap tightly in cling film, and store in the refrigerator for at least half an hour.
Roll pastry out onto a lightly floured surface, adding more flour as you roll to roll it quite thinly. Fit pastry into a buttered 23cm/9″ pie tin or plate, letting it hang over the edges. Trim excess pastry, and crimp. Prick the base of the pie with a fork. Place in the freezer for 15 minutes, or in the refrigerator for half an hour.

National Grab Some Nuts Day on August 3 is the ultimate nutty day. Nuts, legumes, seeds drupes, either way – they’re all considered nuts and are all in some way a part of our daily diet. Nuts are rich in nutrients and minerals, and if eaten in the correct quantities, are great for improving our health. This day promotes the consumption of all nuts, the health benefits, and their tastiness. You won’t be surprised to hear that it’s a very nutty occasion.
History of National Grab Some Nuts Day
Although the origin of National Grab Some Nuts Day is unknown, we do know that when this day first started being observed there was some confusion to its purpose. Some were celebrating the nuts we eat, whereas others thought it was all about the metal nuts that go with bolts. Whilst these metal nuts obviously serve their purpose, we’d rather be celebrating food, which is pretty much our stance on most matters.
There is also ample discussion on what is defined as a nut and what is a legume. A legume is generally recognized as a pod containing multiple seeds that begins to open on its own when the season for harvesting approaches. For the purposes of National Grab Some Nuts Day, we suggest celebrating the day by grabbing a handful and savoring the taste!
Whatever it may be, either botanical or non botanical nuts, nuts have an impressive amount of protein, vitamins, minerals, potassium, iron and so on. They say “an apple a day keeps the doctor away,” but even nuts are also capable of this! Consider consuming nuts on a daily basis for snacking to absorb those important nutrients.
Other nutty days do occur throughout the year. These include National Almond Day and National Pecan Day. There’s also a day for cashews, walnuts, peanuts, macadamia nuts, pistachios, and chestnuts. This day is a day for celebrating all these days bundled up in one and grabbing handfuls of as many different kinds as you like. Raw or roasted. Salted, seasoned or plain.
